Ingredients
- 1 package, 3 ounces, blue berry gelatin dessert mix
- 1 cup boiling water
- 1/2 cup cold water
- 1 cup whipped topping, thawed in the refrigerator
- 16 chocolate sandwich cookies, with filling included
- 8 gummy fish candies, 1 per parfait
- 1 tablespoon blue or pearl-colored sprinkles, optional
- 8 clear dessert cups, 6 fluid ounces each
- 1 medium mixing bowl, 2-quart size
- 1 small bowl, 1-quart size
- 1 liquid measuring cup, 1-cup size
- 1 wooden spoon or silicone spatula, 10 to 12 inches
- 1 rolling pin, 10 inches, or the bottom of a sturdy glass for crushing cookies
- 1 resealable plastic bag, 1-gallon size, for crushing cookies
- 1 small tray or baking sheet, 9 by 13 inches, to hold the cups
- 1 kitchen towel, medium size, for stabilizing the bowl and wiping spills
- 1 pair food-safe disposable gloves, optional
Instructions
- Cover your table with a kitchen towel or washable mat before you begin.
- Place the 16 chocolate sandwich cookies inside the 1-gallon resealable bag. Press out most of the air, seal the bag, and crush the cookies with a rolling pin or the bottom of a sturdy glass until they look like coarse sand.
- Divide the cookie crumbs evenly among the 8 clear dessert cups, using about 2 tablespoons in each cup.
- Pour 1 cup of boiling water into the 2-quart mixing bowl. Add the blue gelatin dessert mix and stir for about 2 minutes until the crystals dissolve.
- Stir in the 1/2 cup cold water and let the gelatin mixture cool for about 10 minutes.
- Scoop 1 cup of thawed whipped topping into the small 1-quart bowl. Add 1/2 cup of the cooled blue gelatin mixture and fold slowly.
- Divide the creamy blue mixture among the 8 cups, placing it over the cookie crumbs. Leave enough space for the remaining blue gelatin and decorations.
- Pour the remaining blue gelatin mixture evenly into the cups, aiming for about 2 tablespoons per cup.
- Place the tray in the refrigerator and chill the cups for 2 to 3 hours, or until the gelatin feels firm.
- Uncover the cups and place 1 gummy fish into each parfait.
- Add a few of the blue or pearl sprinkles across the cups if desired.
- Serve the parfaits cold. Wipe the outside of each cup and clean the bowl and tools.
Notes
You can replace whipped topping with homemade whipped cream, and if blue gelatin is hard to find, use a clear or light-colored gelatin with food coloring.
