Ingredients
- 1 box, 3 ounces, blue gelatin dessert mix
- 1 cup boiling water
- 1 cup cold water
- 12 chocolate sandwich cookies, about 6 ounces total
- 6 clear plastic cups, 9 fluid ounces each
- 12 small gummy fish or other ocean-shaped gummy candies
- 18 small green gummy candies or green fruit chews, for sea plants
- 6 small white or pastel candy pieces, optional, for bubbles
- 1 medium mixing bowl, at least 6 cups
- 1 liquid measuring cup, 2-cup size
- 1 wooden spoon or silicone spatula
- 1 quart-size resealable plastic bag, for crushing cookies
- 1 rolling pin or sturdy drinking glass, for crushing cookies
- 1 small tray or baking sheet, to hold the cups while they chill
- 6 small dessert spoons, for serving
- 1 clean kitchen towel or washable table covering, to protect the work surface
Instructions
- Cover the table first with a clean towel or washable table covering.
- Wash your hands and gather the ingredients. Set the six cups on the tray.
- Crush the cookies into sand by putting all 12 cookies into the resealable bag, pressing out most of the air, and rolling over them with the rolling pin until you have fine crumbs.
- Divide the cookie sand by spooning about 2 tablespoons of crumbs into the bottom of each cup.
- Pour the gelatin mix into the mixing bowl, add 1 cup of boiling water, and stir for about 2 minutes until dissolved.
- Stir in 1 cup of cold water and let the bowl sit for 5 to 8 minutes.
- Pour about 2 tablespoons of gelatin into each cup to cover the cookie sand and place the tray in the refrigerator for 15 to 20 minutes.
- Press 2 gummy fish and 3 green candy pieces into each cup, adding an optional white or pastel candy piece for bubbles.
- Pour the remaining gelatin evenly among the six cups, close to the surface to minimize bubbles.
- Cover the tray loosely with plastic wrap and refrigerate for 3 to 4 hours until the parfaits are firm.
- Add a dessert spoon to each cup and serve cold.
