Ingredients
- 1 box, 3 ounces, blue gelatin dessert mix
- 1 cup boiling water
- 1 cup cold water
- 6 clear plastic cups, 9 fluid ounces each
- 8 chocolate sandwich cookies, for the sand layer
- 1 cup whipped topping, thawed
- 6 small gummy fish candies, or 12 mini fish candies
- 2 tablespoons blue sprinkles, optional
- 1 medium mixing bowl, 4 to 6 quarts
- 1 liquid measuring cup, 2 cups
- 1 long-handled spoon or silicone spatula
- 1 resealable plastic bag, 1 gallon
- 1 rolling pin or smooth drinking glass, for crushing cookies
- 1 small spoon, for adding the sand and topping
- 1 refrigerator-safe tray, large enough for 6 cups
- 1 clean kitchen towel, for wiping drips
- 1 box of disposable food-safe gloves, optional for children helping with candy
Instructions
- Cover the table with a clean towel or washable table covering before you start.
- Set the six clear cups on the refrigerator-safe tray, leaving a little space between them.
- Place the chocolate sandwich cookies in the resealable bag, press out most of the air, seal the bag, and crush the cookies using the rolling pin or smooth glass until they look like coarse sand.
- Measure 1 cup of boiling water into the mixing bowl and add the blue gelatin dessert mix, stirring for about 2 minutes until the crystals dissolve.
- Pour in 1 cup of cold water and stir for about 30 seconds, then let it stand for 2 minutes.
- Divide the blue gelatin among the six cups, filling each one about two-thirds full, and wipe any drips from the rim.
- Move the tray carefully to the refrigerator and chill for 2 to 3 hours until firm.
- Once the blue layer has set, spoon about 2 tablespoons of whipped topping onto each cup and spread it lightly.
- Add approximately 1 tablespoon of cookie crumbs over the whipped topping, sprinkling it mostly along one side.
- Place 1 gummy fish on each cup, or use 2 mini fish candies, and add blue sprinkles if desired.
- Serve the cups right away, or return them to the refrigerator for up to 2 hours.
