Ingredients
- 1 package, 3.4 ounces, instant vanilla pudding mix
- 2 cups cold milk
- 2 drops blue gel food coloring
- 12 chocolate sandwich cookies, finely crushed
- 1 cup whipped topping, thawed
- 12 small candy shells or ocean-colored candies
- 2 tablespoons white or blue sprinkles, optional
- 6 clear dessert cups, 6 fluid ounces each
- 1 medium mixing bowl, 2-quart size
- 1 small bowl, 1-cup size, for crumbs
- 1 whisk, 8 to 10 inches
- 1 rubber spatula, 9 to 10 inches
- 1 tablespoon measuring spoon
- 1 teaspoon measuring spoon
- 1 damp kitchen towel, for wiping rims
- 1 rimmed baking sheet, 12 by 18 inches, for carrying the cups
- 1 box disposable food-safe gloves, optional
Instructions
- Cover your table with a clean towel or rimmed baking sheet before you begin.
- Set the six cups in a row.
- Crush the 12 chocolate sandwich cookies until you have mostly fine crumbs with a few tiny pieces left.
- Pour the 2 cups of cold milk into the mixing bowl.
- Add the instant vanilla pudding mix and whisk for about 2 minutes until it thickens.
- Add 2 drops of blue gel food coloring and fold with the rubber spatula.
- Let the pudding stand for 5 minutes.
- Add 1 tablespoon of cookie crumbs to the bottom of each cup.
- Spoon about 3 tablespoons of blue pudding over the crumbs in each cup, working slowly around the edges first.
- Place the cups on the baking sheet and chill for 30 minutes.
- Divide the whipped topping between the six cups, using about 2 tablespoons for each.
- Spread it gently with the back of the teaspoon.
- Scatter the remaining cookie crumbs over the whipped topping.
- Add the candy shells, placing 2 on each cup, then finish with the optional sprinkles.
- Wipe the rims with the damp kitchen towel, then cover the cups loosely with plastic wrap.
- Chill for at least 2 hours, or up to 4 hours for the firmest texture.
Notes
This dessert can also be prepared the day before, but the cookie crumbs may soften as they sit. The dessert works well for summer gatherings or casual celebrations.
