Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined.
  • Gently fold in the caramel bits until evenly distributed throughout the dough.
  • Use a cookie scoop or tablespoon to drop dough balls onto a lined baking sheet, leaving space between each cookie.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers are slightly soft.
  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Customize your cookies with chocolate chips, nuts, or dried fruit. For a vegan option, replace butter with coconut oil and use flax eggs. Use gluten-free flour for a delicious alternative.
