Preparation

  • Preheat your oven to 350°F (175°C). This ensures even baking.
  • Grease an 8x8 inch baking pan or line it with parchment paper for easy removal.

Mixing

  • In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg to evenly distribute the leavening agents.
  • In another bowl, combine melted butter, brown sugar, egg, and vanilla extract. Stir until well blended.
  • Fold in the grated carrots into the wet mixture.
  • Slowly add the dry ingredients to the wet mixture. Stir until just combined; avoid over-mixing.

Baking

  • Pour the batter into the prepared pan. Spread evenly and smooth the top. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • Allow the brownies to cool in the pan for about 10 minutes before transferring to a wire rack.
