Preparation

  • Preheat your oven to 350°F (175°C) to prepare for baking.
  • In a large bowl, combine rolled oats, dried cranberries, baking powder, cinnamon, and salt. Mix well to ensure even distribution.
  • In another bowl, whisk together cottage cheese, orange juice, orange zest, honey (or syrup), eggs, and vanilla extract. The mixture should be smooth and creamy.
  • Gradually fold the wet mixture into the dry ingredients. Stir gently until everything is well combined, but avoid overmixing.
  • Grease a baking dish with cooking spray or oil, ensuring it’s well coated to prevent sticking.

Baking

  • Pour the mixture into the prepared baking dish and spread it out evenly.
  • Place the dish in the preheated oven and bake for about 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.

Serving

  • Let it cool for a few minutes before cutting into squares. Serve warm and enjoy the perfect breakfast treat.

Notes

Add nuts for crunch, consider using different fruits for variety, and adjust sweetness as desired. This dish can also be made gluten-free by using certified gluten-free oats.
