  • Food coloring Optional for color.

Preparation

  • Line a baking sheet with parchment paper to prevent sticking.

Cooking

  • In a medium saucepan, mix sugar and corn syrup on low heat. Stir until the sugar dissolves completely.
  • Use a candy thermometer to heat the mixture to 300°F (hard crack stage). Watch for bubbling; the color should change slightly.
  • Remove the pan from heat and quickly stir in the baking soda, citric acid, and flavored extract. Add food coloring if desired. The mixture will bubble and expand.
  • Carefully pour the mixture onto the prepared baking sheet and spread it out with a spatula to your desired thickness.

Cooling

  • Allow the candy to cool completely, then break into small pieces.
  • For best results, let them air dry for 24 hours to retain their fizz.

Notes

Feel free to experiment with different extracts for flavors. Consider adding crushed candies or sprinkles for texture.
