  • 1 teaspoon sodium alginate Creates the chewy outer layer.
  • 1 teaspoon calcium lactate Used in the setting mixture.

  • 1 mixing bowl For combining ingredients.
  • 1 whisk whisk For mixing the fruit juice with sodium alginate.
  • 1 syringe or dropper For dropping the mixture into the calcium bath.
  • 1 slotted spoon slotted spoon To remove boba from the calcium bath.
  • 1 bowl of cold water For setting the boba after cooking.

Preparation

  • In a mixing bowl, combine the fruit juice and water.
  • Whisk in the sodium alginate until fully dissolved.

Calcium Bath

  • In another bowl, dissolve the calcium lactate in 1 cup of water.

Forming the Boba

  • Fill a syringe or dropper with the juice mixture.
  • Gently squeeze drops of the mixture into the calcium bath.

Setting the Boba

  • Let the boba sit in the calcium bath for 2-3 minutes.
  • Use a slotted spoon to remove the boba and place them in a bowl of cold water.

Rinse and Store

  • Rinse the boba gently in cold water to stop the cooking process.
  • Store them in a syrup or serve immediately.

Notes

You can experiment with different fruit juices, adjust sweetness levels, and even add food coloring for a vibrant look. Homemade boba is best enjoyed fresh but can be stored in the refrigerator for up to 2-3 days.
