  • 1/2 cup granulated sugar
  • 1/4 cup corn syrup
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon citric acid
  • to taste flavored extract (e.g., cherry, vanilla, or lemon)
  • optional Food coloring Optional for coloring the candy

Instructions
 

Preparation

  • Line a baking sheet with parchment paper to create a non-stick surface.

Cooking

  • In a saucepan, combine the granulated sugar, corn syrup, and flavored extract.
  • Place over medium heat and stir until the sugar dissolves.
  • Using a cooking thermometer, monitor the temperature and cook until it reaches 300°F (hard crack stage).

Add the Pop Rocks Effect

  • Remove the saucepan from heat immediately once it reaches the desired temperature.
  • Quickly mix in the baking soda and citric acid until the mixture bubbles up.
  • If using food coloring, add a few drops and stir well.

Shape the Candy

  • Carefully pour the bubbly mixture onto the prepared parchment paper.
  • Spread evenly into a thin layer using a spatula.
  • Allow the candy to cool completely for about 30 minutes.

Break It Up

  • Once cool, break the candy into small pieces and store in an airtight container.

Notes

Keep the candy in a dry place to maintain its popping effect; moisture will make it lose its fizz. Experiment with different flavors and add-ins!
