Lychee Boba Mixture

  • 1 cup lychee juice (or lychee puree) Fresh or canned, without added sugars
  • 1 cup water For agar-agar mixture
  • 1/2 cup tapioca starch Plus extra for dusting
  • 1/4 cup sugar Adjust to taste
  • 1 tablespoon agar-agar powder Substitute with gelatin if necessary
  • Food coloring Optional for visual appeal

Preparation

  • In a saucepan, combine the lychee juice and sugar over medium heat. Stir until the sugar dissolves, creating a sweet syrup.
  • In another bowl, mix 1 cup of water with agar-agar powder. Heat the mixture until it boils, then allow it to simmer for about 5 minutes.
  • Gradually mix the lychee syrup into the agar-agar mixture. Stir until well combined.
  • Slowly incorporate tapioca starch, stirring until the mixture forms a dough-like consistency. If desired, add food coloring for visual appeal.

Shaping and Cooking

  • Dust your hands with tapioca starch and form small balls from the dough, ensuring they are evenly sized for uniform cooking.
  • Boil a pot of water and carefully drop the boba balls into the boiling water. Cook for about 5-7 minutes, or until the boba floats to the surface and has a chewy texture.
  • Remove the boba from boiling water and place them in a bowl of cold water to stop the cooking process. Drain and rinse with cold water before adding them to your favorite beverages or desserts.

Notes

Freshly made boba can last in the fridge for about 2-3 days, but they are best enjoyed within the first day. Avoid freezing as it may change the texture.
