  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

For the Filling and Decoration

  • 1 cup milk chocolate chips or a bar, cut into small pieces

Instructions
 

Preparing the Dough

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, beat the softened butter, sugar, and brown sugar until light and fluffy.
  • Mix in the eggs and vanilla extract until fully combined.

Mixing Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined.

Forming the Cookies

  • Chill the cookie dough in the refrigerator for about 30 minutes for better handling.
  • Roll out the dough and use pumpkin-shaped cookie cutters to create cookie shapes.
  • Place half of the pumpkin cookies on the baking sheet, add a piece of milk chocolate to the center, and top with the remaining pumpkin cookies.

Baking

  • Bake for about 10-12 minutes, or until the edges are golden but the centers remain soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Decorating

  • Once cooled, use orange and black icing to decorate your cookies, creating jack-o-lantern faces.

Notes

Try serving these cookies warm with a scoop of vanilla ice cream for an indulgent dessert. Store in an airtight container at room temperature for up to five days. You can freeze the cookie dough for up to 3 months; just thaw it in the refrigerator before baking.
