Ingredients
  

Pudding Layer

  • 2 cups milk
  • 1 package instant vanilla pudding mix

Gelatin Layer

  • 1 package blue raspberry gelatin

Toppings

  • 1 cup whipped topping
  • ½ cup shredded coconut optional

Preparation

  • In a mixing bowl, combine 2 cups of milk and the instant vanilla pudding mix. Whisk until well combined and let it sit for 5 minutes until it thickens.

Create the Blue Raspberry Layer

  • In a separate bowl, prepare blue raspberry gelatin according to package directions using 2 cups of boiling water and stirring until fully dissolved. Allow it to cool slightly.

Assemble the Cups

  • Start with a layer of vanilla pudding at the bottom of clear plastic cups (about 1/3 full).
  • Gently pour a layer of blue raspberry gelatin on top of the vanilla pudding.
  • Add a second layer of vanilla pudding, filling the cup to about 2/3 full.
  • Finally, carefully pour more blue raspberry gelatin until the cups are nearly full.

Add Finishing Touches

  • Top with whipped topping to create fluffy waves.
  • Sprinkle shredded coconut on top for a beachy texture (optional).
  • Chill in the refrigerator for at least 2 hours before serving.

Notes

Customize flavors by swapping vanilla pudding with lemon or coconut pudding. Experiment with different gelatin flavors and use fruit slices or candy shells for added decoration. These can be prepared a day ahead and stored in the refrigerator.
