Ingredients
  

Candy Mixture

  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1 cup water
  • 1/2 teaspoon flavored extract (e.g., cherry, grape, etc.)
  • to taste food coloring (optional)

Final Touches

  • 1 cup Pop Rocks candy
  • as needed lollipop sticks
  • as needed silicone lollipop molds

Instructions
 

Preparation

  • Gather all materials and ensure a clean workspace.
  • Lightly grease silicone molds with non-stick spray for easy removal.

Making the Candy Mixture

  • In a medium saucepan, combine sugar, corn syrup, and water.
  • Place over medium heat, stirring until the sugar dissolves.
  • Stop stirring and let the mixture boil without stirring until it reaches 300°F (hard crack stage).

Flavoring and Pouring

  • Once the mixture reaches the desired temperature, remove from heat.
  • Quickly stir in your chosen flavored extract and food coloring, if desired.
  • Let the mixture cool for a couple of minutes, but don’t let it harden.

Incorporating Pop Rocks

  • Once the mixture has cooled slightly, add Pop Rocks candy and mix gently to avoid losing all the fizz.
  • Carefully pour the mixture into prepared silicone molds, filling them just enough to form lollipops.
  • Place lollipop sticks in the center of each mold.

Set and Remove

  • Allow lollipops to cool and set at room temperature for about 30 minutes.
  • Carefully remove lollipops from the molds and enjoy!

Notes

Experiment with different flavored extracts and colors to customize your lollipops. Store lollipops in an airtight container at room temperature.
