Ingredients
  

Fruit Juice Mixture

  • 1 cup fruit juice (choose your favorite flavor) Fresh juice yields the best flavor.
  • ¼ cup water
  • ½ teaspoon sodium alginate Gradually whisk into the juice mixture.

Calcium Bath

  • ½ cup calcium lactate Mix with water for the calcium bath.
  • 1 ½ cups water Used to dissolve calcium lactate.

Equipment

  • 1 unit syringe or dropper For dropping the juice into the calcium bath.
  • 1 unit bowl for mixing
  • 1 unit whisk For mixing the juice and sodium alginate.
  • 1 unit strainer To collect the finished boba.
  • 1 small bowl for the finished boba
  • optional unit food coloring To enhance the color of the boba.

Preparing the Fruit Juice Mixture

  • Select a juice that you love! Fresh juice will yield the best flavor.
  • In a bowl, combine 1 cup of fruit juice with ¼ cup of water.
  • Gradually whisk in ½ teaspoon of sodium alginate until fully dissolved. This can take a minute or two.

Preparing the Calcium Bath

  • In a separate bowl, combine ½ cup calcium lactate with 1 ½ cups water. Stir until dissolved.
  • Make sure this mixture is ready for when you need it!

Spherification Process

  • Use a syringe or dropper to draw up the fruit juice mixture.
  • Slowly drop the juice into the calcium bath. You’ll see the droplets form into little spheres as they hit the bath!
  • Allow the boba spheres to sit in the bath for 1-3 minutes, depending on the desired firmness.

Collecting Your Popping Boba

  • Carefully use a strainer to remove the boba from the calcium bath.
  • Gently rinse the boba in fresh water to remove any excess calcium.
  • Enjoy immediately or store in a bowl with a little bit of the juice to keep them wet and flavorful.

Notes

You can adjust sweetness, flavors, and even sizes of the boba. Avoid highly acidic juices for best results.
