  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in the chopped pecans.
  • Using a cookie scoop or tablespoon, drop rounded balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  • Dust with powdered sugar if desired before serving.

Notes

Feel free to swap pecans for walnuts or almonds, experiment with spices, and store in an airtight container at room temperature for up to a week. Dough can also be chilled for a firmer texture.
