Preparation

  • Clear a large workspace and lay down parchment paper to catch any sugar that spills.

Making Sugar Syrup

  • In a small saucepan, combine the sugar, corn syrup, and water.
  • Stir ingredients together until combined, then place over medium heat.

Heating the Mixture

  • Attach the candy thermometer to the side of the saucepan, ensuring it does not touch the bottom.
  • Bring the mixture to a boil without stirring. Watch closely for a temperature of 300°F (hard crack stage).

Creating the Snowflakes

  • Once the temperature is reached, remove from heat immediately.
  • Allow the syrup to cool slightly until bubbling stops, then spray or oil your whisk or fork.

Spinning the Sugar

  • Dip your whisk or fork into the syrup, then gently flick your wrist to create thin strands.
  • Move your arm around to form a circular shape, layering the strands to build a snowflake design.

Cooling and Setting

  • Let the spun sugar snowflakes cool completely on the parchment paper before removing them gently.
