Ingredients
  

For the Watermelon Fries

  • 1 large seedless watermelon

For the Coconut Lime Dip

  • 1 cup coconut yogurt (or any preferred yogurt) Use dairy or non-dairy yogurt.
  • 2 tablespoons honey or maple syrup Adjust to taste.
  • 1 tablespoon lime zest Zest of one lime.
  • 1 tablespoon lime juice Juice of one lime.
  • 1 pinch salt
  • Optional garnish: shredded coconut, lime wedges

Preparation

  • Wash the watermelon by rinsing it under cool water to remove any dirt.
  • Slice the watermelon in half lengthwise, then into quarters. Remove the rind and slice the flesh into 'fries' (thin rectangular slices).

Make the Coconut Lime Dip

  • In a small bowl, combine the coconut yogurt, honey or maple syrup, lime zest, lime juice, and a pinch of salt.
  • Stir well using a whisk or spoon until smooth and creamy, adjusting sweetness to taste.

Assemble and Serve

  • Arrange the watermelon fries on a platter.
  • Place your coconut lime dip in a small bowl alongside the fries.
  • Optional: Sprinkle shredded coconut over the dip and add lime wedges for extra zest.

Notes

Feel free to swap the yogurt for Greek yogurt or flavored yogurts for a different taste. You can also add chili powder or Tajin on the watermelon fries for a spicy kick.
