Ingredients
  

Watermelon Layer

  • 2 cups watermelon juice (fresh or store-bought)
  • 1 packet unflavored gelatin
  • 1 cup water

Green Layer

  • 1 packet green gelatin (like lime)

Preparation

  • If using fresh watermelon, blend watermelon chunks until smooth.
  • Strain the juice to remove pulp, if desired.

Make the Watermelon Layer

  • In a mixing bowl, combine 1 cup of watermelon juice with 1 packet of unflavored gelatin.
  • Heat on low in the saucepan, stirring until the gelatin dissolves completely.
  • Optionally, add sugar to taste, mixing until fully dissolved.
  • Pour the mixture into molds or dish and refrigerate for about 2-3 hours, or until set.

Create the Green Layer

  • In the saucepan, combine 1 cup of water and the green gelatin packet.
  • Heat gently, stirring to dissolve the gelatin completely.
  • Let the mixture cool slightly before pouring it over the set watermelon layer.
  • Return to the refrigerator and chill until the green layer is firm, about 2-3 hours.

Cut and Serve

  • Once fully set, remove the jello from the molds or dish.
  • Slice into wedges like a watermelon.
  • Serve chilled for maximum wiggly fun!

Notes

For added fun, garnishing with mint leaves or whipped cream is suggested. You can also substitute jello flavors and add fruit chunks for variations.
